For my money*, Nik Silver Efex Pro 2 is easily the best application to convert images to mono. Unfortunately, in what I consider an act of vandalism, current owner Google no longer provides support and its future is uncertain. Amateur Photographer has just published a tutorial for producing black and white images which contains some useful tips. From what I have seen to date, Lightroom might well be the best option for mono conversion going forward as the functions it offers mirror much of what SEP2 provides.

* It really was. I paid full price for SEP2 when it was a standalone application and an expensive one at that. It was worth every penny.
